Quick and easy to make ravioli dish with tender chicken breast in a spicy, flavorful Alfredo sauce. Great for a weeknight dinner but also good enough for company.
Bring a large stock pot of water to a boil while prepping ingredients for the sauce. This will be used to cook the ravioli.
Preheat the oil in a large skillet on medium heat. Add onion and garlic and cook, stirring frequently for about 4 minutes. Do not allow it to brown. Add tomatoes, Alfredo sauce, salt, pepper, and jerk seasoning. Cook until sauce bubbles, stirring occasionally. Stir in chicken. When the sauce bubbles, reduce heat slightly and cover the pot loosely. Cook for 6 to 7 minutes or until the chicken pieces are no longer pink in the center.
While the chicken cooks, drop the ravioli into boiling water and cook according to package directions. The one I use cooks in about 4 minutes.
When the sauce is done, remove pot from heat. Drain ravioli well and stir it into the sauce. Plate and garnish with parsley (optional). Makes 4 to 5 servings.

Tammy N Tim–I don’t see why you can’t use other kinds of tomatoes. Just make sure you drain them well beforehand. Hope it comes out well for you!

I was also wondering if you can use chopped or diced tomatoes in place of the plum tomatoes?

I am thinking that this would be good over any type of noodle. I have tortellini in the freezer, but no ravioli; so I might try the tortellini version LOL. I will let everyone know how it turns out.
