The savory gorgozola, raspberry, pistachio and thyme filling complements grilled pork chops.
Preheat grill to 350 degrees for medium direct grilling (this recipe is also great for pan-frying). While the grill is heating up, assemble the stuffing. Mix the raspberries, gorgonzola, pistachios, and thyme to form a mixture. Then add olive oil, salt and pepper to taste.
Cut “pockets” into the pork chops, large enough to fill with 2 tablespoons of the stuffing. Stuff the pork chops then head out to the grill!
Grill the pork chops at least 5 minutes on each side, or until a meat thermometer inserted into the middle reads 170 degrees. The thickness of the chops will determine how long they need to be grilled.
Great served with your favorite rice or starch.

yum! This is one of my favorite flavor combos! I think I’ll give it a try with chicken and let you know how quick it disappears from my plate : )
