Description

Great for serving a crowd.

Ingredients

  • 2 Tablespoons Melted Butter
  • 5 whole Medium-sized Boneless, Skinless Chicken Breasts (reduce Amount If They Are Large Breasts)
  • 3 cups Hot Water
  • 1 envelope Onion Soup Mix, 2 Oz. Size
  • 2 cans Cream Of Chicken Soup, 10 Oz. Each
  • 1-½ cup Minute Rice
  • ¼ teaspoons Each, Salt And Pepper
  • 7 slices Processed Cheese Slices
  • 1-½ box Stove Top Stuffing Mix, 4 Oz. Each OR 4 Cups Homemade Stuffing Mix (see My Recipe Box)
  • ½ cups Melted Margarine Or Butter

Preparation

Preheat oven to 350 F. Drizzle the 2 tablespoons of melted butter in a 9×13 baking dish. Cut the chicken breast into 1″ chunks and add it into the pan. In a medium sized bowl mix together the water, onion soup mix, cream of chicken soup, rice, salt and pepper. Pour over the chicken.

Next, layer cheese slices on top of the chicken in a single layer. Bake for 45-60 minutes. Don’t over-bake. Remove from oven but keep the oven on.

Mix StoveTop stuffing in a medium sized bowl with the 1/2 cup of melted margarine. Put the stuffing mixture on top of the casserole and bake 10 minutes longer.
