Description

Stumped on what to bring for lunch every day? Give this Quick and Easy Tuna Melt a try and you’ll be craving it at your desk all week!

Ingredients

  • 10 ounces, fluid Chunk Light Albacore Tuna, Drained
  • 2 Tablespoons Red Onion, Minced
  • 2 Tablespoons Mayonnaise
  • 1 Tablespoon Fresh Lemon Juice
  • 1 Tablespoon Capers, Drained
  • ⅛ teaspoons Salt
  • ¼ teaspoons Red Pepper Flakes
  • Freshly Ground Pepper, to taste
  • 4  Sliced Whole-wheat Bread, Toasted (I Prefer Slices Of Artisan Baker-style Bread)
  • 2  Roma Tomatoes, Sliced
  • ½ cups Shredded Sharp Cheddar Cheese

Preparation

Preheat broiler to high.

Combine tuna, red onion, mayo, lemon juice, capers, salt, red pepper flakes and pepper in a medium bowl. Spread ¼ cup of the tuna mixture on each slice of toast and top with tomato slices. Sprinkle the tops with about 2 tablespoons cheese each.

Place sandwiches on a baking sheet and broil until the cheese is bubbling and golden brown, 3 to 5 minutes. Keep a very watchful eye on them because they can and will burn in an instant!
