Description

A quick stir fry dinner for busy nights.

Ingredients

  • 1 cup Brown Minute Rice
  • 1 cup Water
  • 1 bag Frozen Vegetables (12 Or 16 Ounce Bag)
  • ½ cups Water
  • 1 can Pineapple Chunks (8 Ounce Can)
  • ¼ cups Soy Sauce

Preparation

Prepare the Brown Minute Rice in the microwave (or on the stove, whichever you prefer). Add 1 cup of rice to 1 cup of water (use the ratio specified on your package, and prepare according to package instructions).

Add a bag of frozen veggies and 1/2 cup water to a pan on medium/high heat. (Pick any bag of veggies from the frozen isle, there are stir fry specific bags or just get your favorite).

Stir around until the vegetables start to thaw. Or if you’re busy you can also put a lid on the pan and let them steam for a few minutes! (Lower heat to medium/low if you do this).

After the veggies have thawed out, add in the can of pineapple chunks, add the juice too!

Immediately after adding the pineapple, add in the soy sauce (if you prefer teriyaki, go for it and use that instead!)

Stir the veggies for a few minutes (or add the lid to the pan and let the sauce simmer on the vegetables).

When the rice is done, add the rice to the mix, stir around.

You can let it sit on the stove with the lid on, or if you’re on the run just stir for a minute or two and then serve. You just need to heat everything through and you are ready to go.
