Description

A church event favorite. So good with a boiled ring of bologna .

Ingredients

  • 2 packages (14 To 16 Oz. Package) Ring Of Bologna
  • 1 cup Pancake Mix
  • Enough Water To Add To Pancake Mix To Create A Batter
  • 1 whole Small Onion
  • 1 pound Shredded Hashbrown Potatoes

Preparation

Put bologna in a large pot and boil it for a few minutes while you prepare the batter.

While the bologna is cooking, add pancake mix to a large bowl. Add enough water to get batter to a nice consistency (use the water amount specified by the package).

Dice or shred onion into tiny pieces and put in the bowl with the batter. Add shredded potatoes to the bowl. Mix well and get everything nicely coated.

Turn your electric skillet to 350ºF and spray with butter flavored cooking spray.

At this point you want to turn off the heat for the bologna and just let it sit in the warm water for a bit.

When skillet is hot, add a scoop of the potato mixture and push potatoes out, so you get a nice thin pancake. Thick potato pancakes are BAD!

When done, place all your potato pancakes on a platter and add the bologna to the platter.

Note: People either like their potato pancakes sweet (with maple syrup or jam) or savory with sour cream.
