Description

This is one of my favorite recipes of all time. It’s so easy and quick and is a nice change of scenery from the typical tomato-based pasta sauce.

Ingredients

  • 1 whole Onion (sm/med), Finely Chopped
  • 1 wheel Red Bell Pepper, Finely Chopped
  • 2 cloves Garlic, Minced
  • 3 Tablespoons Butter
  • ¾ cups Pumpkin Puree
  • 1 cup Chicken Broth
  • ½ cups Water
  • ¼ cups Cream
  • 1 dash Nutmeg, To Taste
  • 1 dash Cinnamon, To Taste
  • 1 dash Salt To Taste
  • 1 dash Pepper To Taste
  • ½ bunches Fresh Parsley, Finely Chopped
  • 4 dashes Parmesan Cheese, Finely Grated
  • ½ pounds Penne Pasta, Cooked Al Dente

Preparation

1) Cook pasta to al dente.

2) Saute onion, bell pepper and garlic in butter over medium heat until onions are soft.

3) Stir in pumpkin, broth, water, cream and spices.

4) Simmer, stirring occasionally, for approximately 10 minutes.

5) Add penne to the skillet and coat with the sauce.

6) Add more water or pumpkin to thin or thicken the sauce, as needed.

7) Sprinkle parsley and parmesan to top when served.

Love this delicious healthy meal! I love the warmth of the pumpkin and spices. Very easy to make too. Next time I will use whole grain pasta for more benefits. Thanks for posting!

Really tasty and simple! Seemed a little bland at first, but that was probably my fault because I was out of onion and garlic, so I went heavier on the spices and added paprika and cumin and it turned out great. Will definitely be making again.
