This was a pasta dish that a friend and I more or less “invented” from a combo of tomato and avocado salad with hot pasta. It can be served hot or cold, and is quick and easy.
This pasta dish is better if you prepare the tomato/avocado sauce some time before serving and refrigerate it before adding the pasta. It needs time to flavor up!
Easy peasy. Mix avocado, tomato, garlic, lemon juice (to add zing and avoid browning) and olive oil, salt and pepper to taste. Leave to marinate in the fridge for a while.
Cook pasta. I prefer fusilli, but go with what you like! Drain, and mix with the tomato/avocado mixture.
Serve.
It’s that easy!
