Description

This is a quick, hearty and satisfying meal. Also if you just open up a new wine bottle for the recipe, you’ll have the rest to drink while cooking. This tastes even better with meatballs, sausage or other meat if you prefer. If butter beans are not available feel free to use anything you have in place of it.

Ingredients

  • 1 package Penne Pasta, 16 Ounce Package
  • 1 clove Garlic, Minced
  • 1 Tablespoon Olive Oil
  • 1 cup Red Wine
  • 1 can (8 Oz. Size) Tomato Paste
  • 1 teaspoon Oregano Or Italian Seasoning
  • 1 can 15.5 Oz Can Butter Beans, Liquid Included
  • Salt And Pepper, to taste
  • Shaved Parmesan, Optional For Serving

Preparation

Bring a medium saucepan of salted water to a boil and cook pasta according to the packet directions.

Meanwhile, place garlic in a saucepan over medium heat with a little olive oil and cook garlic for 1-2 minutes. When garlic is cooked to your liking, place wine, tomato paste, seasoning, beans and the bean liquid from the can in the same saucepan with the garlic. Bring to a boil and simmer for 10 minutes or until the sauce is starting to thicken.

When pasta is cooked, drain it and add to the sauce. Stir together until everything is hot. Taste and season with salt and pepper. Serve with Parmesan shavings on top
