Description

A scrumptious pasta dish that takes fifteen minutes to make. You’ll love it!

Ingredients

  • 12 ounces, weight Pasta, Cooked Al Dente
  • Reserved Pasta Water, If Needed
  • 3 ounces, weight Chopped Pancetta
  • 3 whole Leeks, Sliced Thin
  • 1 Tablespoon Butter
  • ½ cups Dry White Wine
  • ½ cups Heavy Cream
  • Salt And Freshly Ground Pepper, To Taste
  • Parmesan Cheese, Shaved

Preparation

Cook pasta and set aside. Reserve 1/2 cup of pasta water.

Saute chopped pancetta until fat is rendered and it starts to brown. Add sliced leeks and cook for 8 minutes. When you add the leeks, you can also throw in a pat or two of butter if you want to. This’ll give the dish some scrumptious flavor. I add it after the bacon is browned because I don’t want the butter to brown. After 8 to 10 minutes, pour in wine, then cook an additional 1-2 minutes, until reduced. Reduce heat to low, then pour in cream. Add salt and pepper to taste. Stir in Parmesan shavings. Toss in pasta, adding a little pasta water to thin as needed. Serve with Parmesan shavings over the top—delicious!

I made this a few weeks ago, and unfortunately/fortunately did not have any white wine. I substituted the wine with 2 cups chix broth added a bit more cream, and added a tiny bit of roux with 1cup parmesan and WOW. This has become my family’s favorite dish. I cannot wait to try with the wine! Thanks for the inspiration.

I could not decide on this recipe or the bacon tomato featured recipe. So we bought the ingredients for both. Looks like pasta twice this week for dinner!

I made this dish for my family for supper tonight. I got the best thumbs -up ever. I used bacon, since that is what I have (at my small town grocery store I would pay a mint for it anyway) and I used sour cream instead of cream since that is what I had in my frig. I used a little more pasta water and it was great. Thanks Ree. My family is appreciating this recipe site as much as I am!

I made this last night and it was delicious.. My 3 year old granddaughter even thought it was good. It was quick and easy and I will be making it again soon!

OMG!!! This was one of the BEST pastas ever! My hubby actually asked for me to make it again tonight..within a week of the last time we ate it. He does not ask for pasta…he enjoys pasta..just does not ask me for it. He LOVED IT and so did I…going to be a regular in my kitchen!

This was delicious! I will definitely be making this again. Even my husband, who is on the fence when it comes to leeks, really liked it. I bet this would be great with bacon too. I can see lots of ways to play with this dish and makes all kinds of different tasty versions. Thanks for the great recipe!

This is probably my all time favorite pasta dish, and THAT is saying something!!! Ree, amazing! This is the ultimate girl’s night dinner, because it’s really delicious, feels rich, but is relatively light.
