I found, massaged, and made this recipe my own while looking for a fantastic meatless main dish for my Catholic friends during Lent. My favorite pairing is over lobster ravioli. It has become a family favorite! (hiccup)
In a skillet over medium heat, saute onion in butter until slightly brown and soft. Pour in vodka and let cook for 10 minutes. Mix in crushed tomatoes, sugar, basil, oregano, and rosemary and cook for 30 minutes. Pour in heavy cream and cook for another 30 minutes.
Allow to cool slightly. Transfer to a blender and puree until smooth. Serve over your favorite pasta.
