Pasta. Crispy bacon. Toasty garlic. Fresh clams. Minced green chives. Cracked black pepper. Heaven. This is one of those meals that legitimately takes 15 minutes start to finish – so you can pair it with a green salad and some great crusty French bread and be done, top to bottom in 20 minutes. You can’t beat that, especially for something so incredibly delicious!
1) Bring a large pot of salted water to a boil.
2) While you are waiting for the water to boil, cook your bacon over medium heat turning often until it is crispy and all of the fat has been rendered.
3)When the bacon is crispy, remove it from the pan to a paper towel. Put the garlic in the same pan to cook in the bacon fat.
4) Cook the garlic until golden brown and crispy. Then remove it to a paper towel along with the bacon.
5) While the garlic is browning add the pasta to the boiling water and cook to al dente according to manufacturer’s directions.
6) When your pasta has 3-4 minutes left, add the clams to the same large pan that you cooked your bacon in (which should be hot still.)
7) Add the wine to the clams and throw a lid on the pan.
8 ) Steam the clams just until they open (this should take about 3-4 minutes over medium heat).
9) Drain your pasta and then add it back to the pot.
10) Add the olive oil, the clams and juice from the pan, the chives, bacon and garlic all to the pot with the pasta.
11) Toss well and season with kosher salt and black pepper.
12) Serve the pasta with the clams on top and some freshly shredded parmesan if you like!
