Baking it makes it healthier right? . . . Right?!
Preheat oven to 350F.
Beat the eggs in a shallow bowl. Put the breadcrumbs in another shallow bowl. In another shallow bowl, season flour with salt and pepper.
Coat chicken in flour, then in egg, then in breadcrumbs.
Pour the oil into a 9×13 baking dish. Add chicken to the dish and sprinkle with paprika.
Bake for 30 minutes, turn over, and bake 30 minutes more. Drain chicken on paper towels.
