Description

Simple and stunning finger food.

Ingredients

  • 4 packages (3 Oz. Size) Oriental Ramen Noodles With Seasoning Packet
  • 6 cups Water
  • 1 whole Cucumber, Seeded And Cut Into Thin Strips
  • 2 cups Carrot Shreds
  • 1 cup Green Onions, Sliced
  • 3 whole Peppers (I Like Yellow, Orange And Red)
  • 2 cups Seasoned, Cooked Chicken, Roughly Chopped
  • 4 teaspoons Sesame Oil
  • 4 Tablespoons Soy Sauce (Use Reduced Sodium Because Of Ramen's High Sodium Content)
  • 1 piece (1-Inch Long) Ginger Root, Pressed Or Peeled And Chopped Finely
  • 4 cloves Garlic, Pressed
  • ½ teaspoons Cayenne Pepper
  • Lettuce, Such As Butter, Boston, Leaf Lettuce, Or Whatever You Like As Long As It Can Hold The Noodle Mixture Securely
  • Soy Sauce And Sweet And Sour Sauce, To Serve

Preparation

In a large pot, cook ramen noodles (including seasoning packets) in the water, breaking each packet of Ramen into small pieces. Do not follow instructions on package, instead cook with seasonings until al dente. Then drain and rinse with cold water.

Prepare the cucumbers and carrots and set aside for later. Slice green onions. Slice tops and bottoms of bell peppers and chop. Cut remaining pepper (the middles) into thin strips and refrigerate until serving time.

Place noodles, cooked and chopped chicken, chopped bell pepper (remember, tops and bottoms only) and green onions in a large bowl. Stir to combine.

In a small bowl, whisk together sesame oil, soy sauce, ginger, garlic and cayenne pepper. Pour over noodle mixture and stir to coat. Refrigerate until serving time.

Thoroughly wash lettuce leaves, being careful not to tear and pat them dry.

To serve, fill individual lettuce leaves with noodle mixture and top with cucumber, pepper strips and carrot shreds. Drizzle with soy and or sweet and sour sauce.

No forks needed, just dig in!
