My husband orders these at a restaurant all the time, so I tried to recreate it at home.
In a bowl, stir together eggs and cheese. Cook in a large pan as scrambled eggs.
Bake potato in microwave while eggs are cooking. Cut into bite size cubes. When eggs look halfway cooked, add ham and some spices – parsley, oregano, dash of salt – and cook a little longer until eggs are done. Fold in potato.
Place on tortillas, roll up and serve with salsa or sour cream.

Fyi, this is not an Oregon Burrito. But if you ever get the chance to try a real one they’re amazing
