Yummy in my tummy! Just serve with some baked beans, mac and cheese or anything green!
Preheat oven to 350 degrees (F). Heat an oven proof skillet or cast iron skillet on medium high heat. Season pork with salt, pepper and thyme leaves and set aside.
Time to make that sauce. In a sauce pan saute the onion and garlic with some olive oil. When onion is just about carmalized add ketchup, maple syrup, brown mustard, lite brown sugar, apricot preserves, salt and pepper. Stir all together then bring to a boil, lower heat and let reduce down about 20 minutes.
While sauce is reducing brown meat on all sides in skillet at high heat – just to sear it. Then place in a baking dish and place in the oven. Cook meat 20 minutes then spoon half the sauce over the top and return to oven for another 20 minutes until cooked to desired tenderness – make sure the juices are running clear or else you should keep cooking it. Let meat rest for about 15 minutes before slicing. Serve with remaining sauce.

Oh Lord!!! The sauce is done and it is sooooo delicious! I think my husband is a little jealous as he makes his own BBQ Sauce and this is a tad bit tastier, ha! Thanks for such a good recipe!
