Description

This One Skillet Creamy Tuscan Chicken combines golden brown chicken breasts, spinach and sun-dried tomatoes in an Italian seasoned rich creamy garlic Parmesan cheese sauce. It is easy enough for a weeknight meal yet elegant enough for company.

Ingredients

  • 3 Tablespoons Olive Oil, Divided
  • 2  Large Chicken Breasts Cut In Half Lengthwise To Make 4 Thinner Breasts
  • 3 cloves Garlic, Minced
  • ¼ teaspoons Dried Oregano
  • ¼ teaspoons Dried Parsley
  • ⅛ teaspoons Dried Basil
  • 2 pinches Dried Marjoram
  • 2 pinches Crushed Red Pepper
  • ½ cups Low Sodium Chicken Broth
  • 1-¼ cup Heavy Cream
  • ⅔ cups Freshly Grated Parmesan Cheese
  • 3 cups Baby Spinach
  • ⅔ cups Sun Dried Tomatoes
  • Salt And Pepper, to taste

Preparation

Heat 2 tablespoons olive oil to large skillet over medium heat. Add chicken breasts, cook until browned on both sides and cooked through. Remove to plate and cover loosely with foil.

Add remaining 1 tablespoon of olive oil to skillet and reduce heat to low. Add garlic, oregano, parsley, basil, marjoram and crushed red pepper. Cook for 30–60 seconds, stirring several times.

Add chicken broth and cream, stir to combine. Simmer for 5 minutes. Slowly stir in Parmesan until melted. Add spinach and sun-dried tomatoes. Cook until spinach has wilted, approximately 2–3 minutes. Salt and pepper to taste.

Add chicken back to pan and simmer for 5 minutes. Serve promptly, spooning sauce over chicken. If desired, serve over egg noodles or rice.

This recipe is easy and elegant. Do not leave out the sun-dried tomatoes. The first time I made it I didn’t have any so left them out of the recipe. The next time I bought them just for this recipe and it is a game changer!!! My family asks for this regularly now. I added crimini mushrooms and it was the bomb!

This was delicious! I added much more basil, oregano and parsley (because we like it) and thinned it with some more broth at the end. It was easy and delicious. Thank you
