Description

Do you need more easy weeknight dinner recipes for families? This One-Pot Sun-Dried Tomato Chicken Bacon Pasta is just what you’re looking for!

Ingredients

  • 1 Tablespoon Oil
  • 3 Tablespoons Bacon, Chopped
  • 2 whole Chicken Breasts, Cut Into Bite-sized Pieces
  • 1 whole Onion, Small, Chopped
  • 1 clove Garlic, Minced
  • 10 pieces Sun-dried Tomatoes In Oil, Drained And Chopped
  • 2 teaspoons Italian Seasoning
  • ½ cups White Wine, Optional, Use More Broth As Substitute
  • 4 cups Chicken Broth

Preparation

Heat oil in a large pot over medium-high heat. Add bacon and cook for 1 minute. Add chicken and cook until browned.

Add onion, garlic, tomatoes and Italian seasoning to the pot. Cook for another 2–3 minutes while stirring often.

Once the pot is sizzling hot and bottom is starting to brown, pour in white wine (or 1/2 cup chicken broth if not using wine). Bring to a boil while scraping the browned bits off the bottom of the pot.

Pour the chicken broth into the pot, add the pasta, and stir well. Bring to a boil, cover and simmer for 8–10 minutes or until pasta is almost done. Take the pot off the heat and quickly stir the milk into the pasta. Bring back to a low simmer until the sauce has thickened slightly, around 1 minute.

Serve immediately.

On her site she states 4 Cups penne and 1 Cup of milk. There are also more detailed instructions. It looks delicious. I am trying it for tonight’s dinner and will review it tomorrow. Thanks, Nora
