These enchiladas are authentic New Mexico style (layered, not rolled), very easy to make, and very inexpensive!
Preheat oven to 400 degrees. Spray an 8×8 inch baking dish with canola oil cooking spray. Heat tortillas in the microwave for about 30 seconds or until warm. Meanwhile, heat the enchilada sauce on the stove and bring to a simmer.
Spread 4 tortillas evenly on the bottom of the dish. Cover with about 1/3 of the sauce and about 1/2 cup of cheese. Repeat layers twice, placing majority of the cheese on the final layer. Bake for about 20 minutes or until bubbly.
Place one serving on each plate, and top it with a fried egg (this is a New Mexico thing, and is very tasty!). Garnish with a little chopped cilantro.
Serve with beans and rice.
