Description

Delectable Italian grilled cheese sandwich.

Ingredients

  • 1 whole Egg
  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 4 slices Good Quality Crusty Bread, Sliced Thin
  • 2 slices Fresh Mozzarella Cheese, 14-inch Thick
  • Salt And Pepper, to taste
  • Optional Garnish: Basil, Tomatoes, Pesto, Etc

Preparation

The below directions are for making one sandwich at a time. Above ingredients are for 2 sandwiches.

Beat the egg in a shallow bowl. Set it aside.

Heat a cast iron skillet over medium-high heat. Melt 1/2 tablespoon each of butter and oil in the skillet. Quickly coat both sides of two slices of bread in beaten egg and place them in the hot skillet facing each other as if they were an open book. This will ensure the finished sandwich will have both slices of bread facing the same direction (click on the link to my blog to see step-by-step photos).

When the 2 slices of bread are golden brown on the bottom, flip only one slice and quickly top it with one slice of fresh mozzarella cheese. Sprinkle with a little salt and pepper and top the cheese with the other slice of bread, toasted side against the cheese (you should have a slice of yummy mozzarella cheese sandwiched between two sides of toasted bread).

Melt another 1/2 tablespoon each of butter and oil in the skillet and fry both the top and bottom sides of the sandwich until golden on both sides. Remove sandwich from pan, sprinkle with salt, and serve topped with fresh basil leaves, sliced tomatoes, or pesto. Repeat for the other sandwich.
