“Pasta con crema de aguacate y camarones.” A traditional Mexican pasta dish, so easy and simple! My best friend’s mom is Mexican; this is her recipe.
Boil water in a large pot and add pasta. Cook for 8 to 10 minutes, or until pasta is “al dente.”
In the meantime, add the avocado pulp and the pickled jalapeno in a blender. Gradually adding milk, blend it until it gets a creamy consistency (not too thick and not too thin). Add salt and pepper to taste.
Drain the pasta.
Serve pasta on plates, with the avocado sauce over it, topped with shrimp. Serve parmesan cheese with it, if desired.
