Description

This is so easy – no need to pre-cook the noodles! You will get rave reviews with this tasty dish!

Ingredients

  • 1 pound Lean Ground Beef Or Ground Turkey
  • 16 ounces, weight Refried Beans
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Garlic Powder
  • Lasagna Noodles
  • 2-½ cups Water
  • 2-½ cups Salsa Or Picante
  • 2 cups Sour Cream
  • ¾ cups Sliced Green Onions
  • ½ cups Sliced Black Olives
  • 4 ounces, weight Monterey Jack Cheese, Shredded

Preparation

Preheat oven to 350F.

Brown meat and drain.

Add refried beans, oregano, cumin and garlic.

Place 4 uncooked lasagna noodles in the bottom of a 9 x 13 pan.

Spread 1/2 of the beef mixture over the noodles.

Top with 4 more noodles and the remaining beef mixture.

Cover with remaining noodles.

Combine water and salsa. Pour over all.

Cover tightly with foil. Bake at 350 degrees for 1 1/2 hours or until noodles are tender.

Combine sour cream, onions and black olives.

Spoon over casserole and top with Monterey Jack cheese.

Bake uncovered an additional 5 minutes or until cheese is melted.

It’s like lasagna & enchildas had a baby!!! So yummy!

I didn’t have quite enough sour cream, so I added cream cheese….I also added a bit of coriander to the meat mixture and an extra layer of cheese before the second layer of noodles. (I used Monterey Jack Slices, cuz that’s what I had, worked great!).

This was so easy to put together. I loved not having to cook the noodles. Instead of using the seasonings, I used a packet of taco seasoning. I also used 8oz. of cheese. I put 1/2 of it on the last layer of noodles before it was covered with the salsa mixture. Other than those two things, I did everything as directed. It was tasty. Thanks for the recipe!
