A lighter, Greek-inspired take on meatloaf using turkey, feta, kalamata olives and sun-dried tomatoes. Simple, delicious and filling. Sure to become a family favorite!
Preheat oven to 350F and spray a loaf pan with Pam.
Mix turkey, breadcrumbs, salt, pepper and egg together till well combined.
Dice and add tomatoes and olives to the turkey mixture.
Add feta to the mixture and make sure all the ingredients are well combined; transfer to a loaf pan and top with oil. You can leave the oil off and it won’t effect the tast. Bake for 1 hour.
I wanted to serve this with warm pita bread but couldn’t find any locally so I served this with plain naan, an Indian flat bread, and it was delicious!
