Creamy chicken & broccoli.
You can use a deli-cooked chicken for this or boil up a chicken, cool and strip the meat off. Cut broccoli into bite-sized florets; use some stems. Boil for 8 min. and drain, or you could steam it. Whichever is easiest. Put broccoli in the bottom of buttered casserole dish, I use a 9 x 13 pan and spread the boned chicken over the broccoli. Mix together the soup, a full can of milk (use the soup can to measure), and the 1/2 jar of Mayo. Pour over the chicken and broccoli. Spread the shredded cheese over the top and put in a 350 F oven for 35 minutes.

This was one of my favorite dishes from growing up. When I called my mom to ask about the rice she always had in her Chicken Divan….well, she said it was just a little something extra she had added. Deeeeliiiish! I’ve made this with 2-3 cups of rice which make the whole casserole just that much more filling. Yum!

My mom used to make this special for baby and wedding showers. She would fill Pepperidge Farm pastry shells with this casserole and it made for a beautiful presentation.
