Description

Mahi Mahi Kebabs are the perfect light dinner! Zucchini, red onion, and rich mahi mahi are grilled together, leaving you supercharged all day long!

Ingredients

  • 3 cloves Garlic, Minced
  • ⅓ cups Chopped White Onion, About 1/4 Onion
  • ½ cups Olive Oil
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Dried Basil Leaves
  • ¾ teaspoons Salt
  • ½ teaspoons Dried Parsley
  • 1 whole Zucchini, Cut Into 1-inch Squares
  • 1 whole Red Onion, Cut Into Eighths
  • 1 pound Mahi Mahi Filets, Cut Into 1-inch Squares

Preparation

Combine garlic, white onion, olive oil, pepper, basil, salt, and parsley in a resealable bag. Seal bag and squish bag with hands to mix. Add zucchini, onion, and mahi mahi to the bag and marinate in the refrigerator for 30 minutes.

Remove fish from the fridge and heat grill or grill pan to medium/medium high heat. (Grease grill grates with additional olive oil if desired.)

Skewer mahi, zucchini and red onions according to your preference, putting two skewers in them for added protection if desired. Place on the preheated grill and grill until fish has cooked and vegetables are soft, about 6–10 minutes. Once cooked, remove from the grill and serve.
