Description

An easy casserole that involves macaroni and meat!

Ingredients

  • 1 pound Extra Lean Ground Beef
  • ½ whole Medium Onion, Diced
  • 2 Tablespoons Margarine
  • ½ teaspoons Salt
  • 1 can (14 Oz. Size) Diced Tomatoes
  • 1 Tablespoon Flour
  • 1 Tablespoon Parsley Flakes
  • 1 box (12 Oz. Size) Velveeta Shells And Cheese 2% Milk
  • 1 cup Cheddar Cheese, Shredded

Preparation

Preheat oven to 350ºF.

In a large skillet on medium heat, brown and drain the beef. Add onions, margarine, and salt; saute for about 3 minutes.

Stir in tomatoes, flour, and parsley flakes and simmer for 10 minutes.

Cook the Velveeta shells according to package directions and then drain and add the cheese packet. Pour into a buttered/sprayed 2-quart casserole dish. Pour in the meat and tomato mixture and mix it all up. Top it off with the shredded cheddar cheese and cook for 20 minutes.

Total hit at our house! Omitted the parsley, but otherwise stuck to the recipe. We loved it, and it’s definitely going into my repertoire.
