Description

This dish reminded me of the loaded fries I would get at the pub in college!

Ingredients

  • 4 whole Strips Bacon
  • 3 whole Medium Potatoes, Cubed
  • 2 whole Boneless Chicken Breasts, Cubed
  • 1 Tablespoon Olive Oil
  • 1 whole Small Onion, Diced
  • 1 cup Diced Red And/or Green Bell Peppers
  • 4 ounces, weight Monterey Jack Cheese
  • Seasoned Salt And Pepper, to taste

Preparation

Cook bacon and set aside. Bring a pot of water to boil, add potatoes and boil for 5-8 minutes or until potatoes are softened.

In a large skillet, cook chicken; drain any leftover fat or oils. Return skillet to the stove and heat olive oil in it over medium high heat. Add onions and bell peppers, cook for 3 minutes. Add potatoes to the skillet and cook for another 3-5 minutes or until potatoes are slightly browned. Add chicken to the skillet, top with cheese and bacon, cover and cook until cheese is melted.

Note: I added season salt and pepper to taste.

I made this last weekend – came out great – I added the seasoned salt to the potatoes as advised. Added a dollop of sour cream, it was great!

Sorry guys, I did forget to include in the recipe that I used a season salt blend on the potatoes and I used fresh ground pepper over the whole finished dish. I will edit the recipe to include. Thanks for the comments and reviews.

Try with ranch dressing and sour cream mixed in- yum!!

while this dish was somewhat good I have to say it wasn’t nearly flavourful enough. It also comes out tasting like a breakfast dish instead of supper. I will be making it again but I will try adding some seasoning to the potatoes such as a creole seasoning or maybe even some Lawry’s. That is just my opinion but overall a good dish.

Really good – went heavy on the seasonings and will add some garlic in with peppers and onion next time but this is a for sure keeper. I also want to try this with steak and am trying to think of a marinade for the meat – maybe teriyaki or fajita.

It was pretty good…A bit bland and it tasted more like a breakfast dish than dinner.

Was great – added a dollop of sour cream, perfect. Will definitely make this again it was easy to make and my kids loved it.

It was good but bland…I added garlic but I agree with the comment about adding some sort of seasoning to the potatoes, and LOTS more salt and pepper.

This was a husband pleaser!! He is a meat and potato person and this was perfect. I agree with the comments about adding alot of salt and pepper. I will for sure make this again.
