Description

Baked corn tortillas with loads of healthy toppings!

Ingredients

  • 2 whole Grain, Corn Tortillas
  • 5 ounces, weight Chicken, Shredded
  • ¼ cups Low-fat Cheese, Shredded
  • ¼ cups Black Beans
  • 2 Tablespoons Enchilada Sauce
  • 2 Tablespoons Chunky Salsa
  • 2 Tablespoons Low-fat Refried Beans
  • 2 Tablespoons Plain Greek Yogurt
  • 2 slices Avocado, Chopped

Preparation

Preheat oven to 375 degrees.

Cut tortillas into triangles, spritz with olive oil, sprinkle with sea salt, and bake for 10-15 minutes until crispy. Let cool.

Top with chicken, cheese, black beans, enchilada sauce, and salsa. Add a scoop of refried beans and Greek yogurt. Top with avocado.

This was great. We didn’t follow the recipe exactly, but we had flour tortillas that were going bad, and I never would have thought of making them into chips. We used leftover chicken, onions and peppers from the fajitas we had the night before. YUM! And the kids could not stop eating the chips even before we made them into nachos.

Nachos are one of my favorites and this recipe is delicious. Sooo much better than the fatty nachos that I used to love. Thank you sooooooooo much!!!
