A different version of fried chicken.
Preheat oven to 375 degrees.
Mix together the salt, minced herbs and pepper.
Lightly beat the eggs and add to the buttermilk in a bowl.
Season the chicken pieces with the seasoned salt blend. Dust with all-purpose flour.
Dip the chicken pieces in the buttermilk egg mixture and coat with crushed saltines. Make sure the cracker crumbs adhere to the chicken.
Heat oil to high (when a piece of cracker vigorously sizzles when dropped into the hot oil).
Fry chicken pieces on both sides until golden brown. Pay attention as this happens quickly.
Place fried chicken pieces on a baking sheet and bake for 40 to 45 minutes or until done.
Can be served warm or at room temperature.
We like it with served with broccolini that’s been roasted with olive oil and garlic.
