Linguini is tossed with zucchini, bacon, and Parmesan cheese in this easy and quick weeknight meal that’s ready in about thirty minutes!
Cook the pasta according to the package directions, liberally salting the water.
While the pasta cooks, heat the butter and olive oil over medium heat. Add squash, onion, and garlic and cook until onion is softened and squash has cooked to the tenderness you desire.
Drain pasta, reserving about 1/2 cup of the cooking water. Add vegetables and bacon to the pasta and toss, adding cooking water to loosen the pasta if needed. Add shaved Parmesan and toss lightly. Add salt and pepper to taste.
Serve immediately with additional shaved Parmesan cheese, if desired.
