Description

Lime chicken meat done in the Instant Pot.

Ingredients

  • 4 whole Chicken Leg Quarters, About 2 1/2 Lb (or Chicken Breast If You Would Rather)
  • 1 teaspoon Kosher Salt
  • 1 Tablespoon Cajun Seasoning (or Chili Powder)
  • 3 Tablespoons Freshly Squeezed Lime Juice (juice From 1 Lime)

Preparation

Place chicken pieces in Instant Pot. Sprinkle with salt and seasoning. Drizzle lime juice over all, and add up to 1 cup water to cover the bottom of the Instant Pot.

Seal and pressure cook on high for 30 minutes. Natural release 10–15 minutes. Remove chicken from Instant Pot. De-bone and shred the chicken, then return to pot and keep warm until serving.

Serve as desired in tortillas with lettuce, avocado, salsa, and more.
