A lighter version of a Chinese food favorite! A great meal in under 30 minutes!
For the sauce:
Mix all ingredients together in a bowl and set aside.
For the chicken and vegetables:
In a large skillet heat oil over high heat until hot. Add chicken and garlic and cook until chicken is lightly brown on both sides. Add bell pepper and snow peas and mix until combined with chicken. Mix in pineapple chunks and sweet and sour sauce. Reduce heat to medium and cook until sauce thickens and vegetables are your desired level of done, about 4-5 minutes.
Serve with rice and enjoy!
