A light and refreshing dinner for the whole family! On the table in under 30 minutes!
Preheat oven to 350ºF. Place cod fillets in an oven proof dish and set aside.
In a small skillet set over low heat, melt butter and add garlic. Cook for about 2 minutes until garlic is sizzling. Remove from heat. In a large bowl, combine bread crumbs, lemon zest, dried oregano, parsley, salt, pepper and garlic butter. Give a good stir until it is combined.
Squeeze lemon juice over cod fillets and top each fillet with the bread crumb mixture. Bake for about 20 minutes until cod is cooked through and the topping is golden brown and crispy. Remove from oven and serve immediately.
