Ingredients

  • FOR THE MEAT:
  • 1 pound Beef Sirloin
  • ½ Tablespoons Garlic Paste
  • 1  Onion, finely chopped
  • ¼ teaspoons Black Pepper
  • ½ teaspoons Cinnamon
  • ½ teaspoons Allspice
  • ½ teaspoons Cardamom
  • ¼ teaspoons Nutmeg
  • 1 dash Salt
  • 6 Tablespoons Red Wine Vinegar
  • ½ cups Plus 2 Tablespoons Olive Oil, Divided
  • FOR THE SAUCE:
  • 4 cloves Garlic
  • ½ cups Tahini
  • ½ cups Fresh Lemon Juice
  • ¼ cups Finely Chopped Flat Leaf Parsley
  • 3 cups Water
  • Salt To Taste
  • FOR THE ASSEMBLY:
  • 4  Pita Breads ,or Lavash, If You Can Get It
  • 3  Tomatoes, Sliced
  • Pickles

Preparation

Cut beef into thin 2-inch long strips. Place them into a bowl together with garlic, onion, black pepper, cinnamon, allspice, cardamom, nutmeg, and salt and toss well.

Whisk together vinegar and 6 tablespoons oil in a small bowl. Pour mixture into the meat. Cover and let it marinate overnight (or at least 3 hours) in the fridge.

Remove the beef strips from the bowl and dry on paper towels. Discard the marinade. In a skillet, heat the remaining 4 tablespoons oil and cook the beef for 4–5 minutes.

For the sauce, in a food processor, add garlic and pulse a few times. Add tahini, lemon juice, parsley, and water and pulse to combine. Give a taste and season with salt if needed.

Stuff pita breads with beef slices, tomatoes, pickles, and the sauce.
