Description

Kimchi Fried Rice is a delicious meal that you can make any night of the week.

Ingredients

  • ¼ cups Olive Oil (more If You Don't Use A Non-stick Skillet)
  • 1 whole Egg
  • ¼ cups Finely Diced Yellow Onion
  • 1 pinch Coarse Salt
  • 1 clove Garlic, Minced
  • ½ cups Sour Kimchi, Finely Chopped
  • 1 cup Cooked Day-old Rice
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Sesame Oil
  • 1 whole Scallion (white & Light Green Parts Only), Thinly Sliced

Preparation

Heat half of the oil in a large skillet over medium heat. Add the egg to the pan and fry it, flipping once to cook on both sides. Remove egg from skillet and set aside.

Add the onion and a pinch of salt into the skillet. Cook the onions until well softened, stirring occasionally. Add in the garlic, and continue to cook until the onions start to turn brown. Add in the kimchi, cooking until it starts to become crispy and most of the liquid has evaporated. Add in the rice, soy sauce and sesame oil. Cook, stirring often, until the rice is warmed through and beginning to brown. Transfer to a bowl to serve.

Transfer the egg to the top of the rice, and garnish with sliced scallions. Eat immediately, breaking the yolk to act as a sauce over the rice.
