Description

A spicier mac and cheese made with pepper jack and habanero cheeses.

Ingredients

  • 4 cups Pasta (I Used Penne)
  • 12 ounces, weight Bacon (use Turkey Bacon If Desired)
  • 3 cloves Garlic, Minced
  • 1 whole Jalapeno Pepper, Diced (seeds Removed If You Don't Like The Heat)
  • 1 pint Whipping Cream
  • 1 stick Butter, Room Temperature
  • 8 ounces, weight Pepper Jack Cheese, Cubed
  • 8 ounces, weight Habanero Cheese, Cubed
  • 1 Tablespoon Flour

Preparation

Cook the pasta according to the directions on the box. Drain the pasta and add it into a large bowl or pot. Set aside.

Cook the bacon in a skillet over medium heat until crisp. Then, remove it from the skillet onto a paper towel. Drain any excess grease from the skillet. Blot the bacon with paper towels and crumble it. I like to use turkey bacon since it has less grease and is a bit better for you. Add the bacon into the bowl with the pasta.

Add the garlic and jalapeno pieces into the skillet that you used to cook the bacon. Cook over medium heat for 5 minutes then add it into the bowl with the pasta and bacon.

Pour whipping cream into a small pot and slowly warm it over medium-low heat. Add in butter and allow it to melt completely. Drop in the cubes of cheese and allow it to slowly melt and stir occasionally. Once cheese is melted add flour and stir until it is dissolved. Make sure the cheese is completely melted then pour it over the pasta.

Stir everything together and serve immediately. Enjoy this spicy and cheesy dish.
