Description

This is a great slow cooker meal. Wonderful on a fall day!

Ingredients

  • 1 pound Stew Meat
  • 1 Tablespoon Olive Oil
  • 2 cups Sliced Carrots
  • 1 cup Red Bell Pepper, Chopped, Or Green If You Like
  • 8 ounces, weight Mushrooms, Sliced
  • 1 whole Zucchini, Sliced
  • 1 cup Fresh Green Beans, Cut Into 1" Lengths
  • 4 whole Leeks, Chopped
  • 2 cups Celery, Chopped
  • 14 ounces, fluid Can Tomatoes Diced With Juice
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • 2 whole Bay Leaves
  • ¼ teaspoons Thyme
  • 29 ounces, fluid Beef Broth, Low-sodium

Preparation

Brown meat in a skillet with olive oil. Place meat in your slow cooker along with any juices. Add your vegetables, all seasonings, and broth to the pot.

Cover and cook on high for 4 hours, or on low for 8 hours.

Enjoy with crusty Italian bread!
