Description

A quick, easy, and yummy meal that my man LOVES!

Ingredients

  • 3 cups Minute Rice (approximately 6 Servings), Prepared As Directed
  • 2 pounds Italian Sausage
  • 2 cans (14.5 Oz. Can) Crushed Tomatoes
  • 3 cups Water
  • 2 whole Green Peppers Diced
  • 1 whole Onion, Diced
  • 1 jar (about 12 Oz.) Banana Peppers, Drained
  • 1 jar (about 10 To 12 Oz.) Jalapeno Pepper Rings, Drained (optional)
  • 1-½ teaspoon Salt
  • 1 teaspoon Crushed Red Pepper
  • 1 Tablespoon Italian Seasoning

Preparation

In a large skillet, cook the Italian sausage. Drain and put in your crock pot. Using the same skillet, cook the green peppers, onion, banana peppers, and jalapeno peppers over medium heat for about 5 minutes, stiring often. Place the vegetables in the cock pot with the meat. Prepare your Minute Rice as directed and place in the crock pot. Add the salt, red pepper, and Italian seasoning to the cock pot and stir together. Last, add both cans of tomatoes (not drained) and 3 cups of water. Leave on the low setting for 2 hours. Don’t forget to serve with your favorite choice of bread!

Note: you can leave the crock pot on the “warm” setting for a whole work day if needed.

Delicious! I made this last week and it was so good. My husband isn’t big on spicy things, so I left out the jalapeno rings. It was still big on flavor without them. Thanks for sharing!

My husband loves it, too! :) I like that it’s a relatively easy meal but tastes like you spent a few hours on it – I think cooking the veggies with the rice and adding crushed tomatoes gives the rice a great flavor! So far we’ve customized it with cut-up Kielbasa and turkey sausage for a healthier option. Thanks so much! :)
