Description

Adding my Spinach Pistachio Pesto to a simple Italian-style Panini was one of the best decisions I’ve ever made. Can you say, “YUM?!!” Lunch is served!

Ingredients

  • 8 slices Italian Sandwich Bread
  • 1 jar Mayonnaise
  • 1 jar Store-bought Pesto {or Make My Spinach Pistachio Pesto!}
  • 12 ounces, weight Thinly Sliced Deli Ham {tested With Black Forest Variety}
  • 8 ounces, weight Thinly Sliced Genoa Salami
  • 8 ounces, weight Thinly Sliced Pepperoni
  • 4 ounces, weight Sliced Provolone Cheese
  • 1 stick Softened Butter, For Grilling/ Toasting {as Much As Desired/ Needed}

Preparation

Heat up a panini maker on medium heat (if using). Alternatively, use a sauté pan. Wait to heat the pan until your sandwiches are assembled so it doesn’t get too hot!

Spread a thin layer of mayo on four slices of the bread (optional but recommended). You could also sub more pesto for this; just put pesto on both sides of the sandwich. Spread a heaping tablespoon (or an amount to your liking) on the remaining four slices of bread.

Layer each of the mayo-spread slices with 3-oz ham, 2-oz salami, 2-oz pepperoni, 1-oz provolone cheese. Top with the pesto-spread slices, spread-side-down.

Lightly butter the topside of the sandwiches, butter the bottom of your panini maker. Place as many sandwiches as you can fit in the Panini Press; close the press. Cook until the cheese is melted, the bread is crisp and golden. If you are using a saute pan you can just heat the pan over medium heat and melt the butter in the pan. Add the sandwiches, place another heavy pan on top to press them. Cook until the bottom side is golden, then flip, adding more butter to the pan before flipping. Use a large pan so you can do more sandwiches at once, or cook in batches if needed! Try to find a pan that fits at least 2 of your sandwiches though! Less batches = Less work. Less waiting to eat!

A NOTE: Feel free to add more or less meat per sandwich to your liking/preferences. You can also add any veggies of choice that you like to your panini – spinach, tomatoes, peppers, olives – whatever sounds tasty to you!! Make this sandwich your own but I guarantee it will be delicious as is if you make no adjustments. ENJOY!
