A slightly sweet, slightly sour, slightly creamy chicken dish that requires almost zero effort and is surprisingly delicious.
Brine chicken if needed. Rinse chicken and place in a 9×13 casserole dish.
Mix together remaining ingredients, mixing dressing ingredients together separately if making your own.
Pour sauce over chicken, cover pan with foil and bake in a pre-heated 350ºF oven for 30–45 minutes, depending on the thickness of your chicken. Check for doneness.
Remove chicken from pan and set aside.
Thicken sauce if desired with 1 tablespoon cornstarch mixed with 2 tablespoons cold water.
Serve chicken and sauce over rice.
