Cook chicken to perfection with this Instant Pot recipe!
Add quinoa and water to the Instant Pot. Place chicken on top and season with salt, pepper, cumin, garlic powder, dill, paprika, oregano, and coriander. Close Instant Pot, set the knob to seal, and cook on high pressure for 10 minutes. Once pressure cooker completes its cycle, release pressure and remove the lid. Fluff quinoa, remove chicken and cut into slices.
Meanwhile, prepare tzatziki sauce by combining all ingredients. Set aside while chicken cooks.
To assemble the bowls, place quinoa and chicken in a bowl first. Top with cucumber, tomatoes, chickpeas, and olives. Top with tzatziki sauce and serve.
