I thew this together for lunch one day when I wanted something new. It was so good that now it is part of my regular rotation.
Heat olive oil in a skillet. When hot, add zucchini and salt and pepper to taste.
While zucchini is cooking, spread a generous layer of hummus on each side of the pita or each piece of bread. Press cheese evenly onto both sides of each pita or piece of bread.
When zucchini is just beginning to brown a bit in the skillet, add 1/2 to each sandwich, keeping the skillet warm on the stovetop.
Place the sandwich in the skillet. Use a big spatula to press firmly on the top and push the zucchini into one even layer. When the first side is toasted, about 3 minutes, flip and brown the other side.
Remove from the skillet and serve immediately.
