A healthy, herb-infused pizza crust with whatever toppings you like best!
To prepare the dough:
Dissolve yeast in warm water. Add the wheat flour, tomato juice, half of the chopped chives, rosemary, white pepper, and olive oil; mix well. Gradually add all-purpose flour as it works into the dough. Once all the flour is mixed in, place dough on a lightly floured surface and knead it for about 5 minutes, until it is smooth and elastic. Let it rise, preferably in a warm place, for 45-60 minutes. Once it has doubled in size, punch down into a pizza pan and spread out to desired shape and thickness.
Now, to dress it up, top with whatever you prefer. Sauce, cheese, and the good stuff! In this recipe, I use tomatoes, olives, and the remaining chives.
Bake in the oven for 12-15 minutes at 425 degrees, until cheese is melted and turning golden brown.
Variations:
For a Margarita Pizza, omit chives and rosemary, and substitute in chopped basil leaves in the dough. Add fresh sliced mozzarella cheese with fresh sliced tomatoes and basil on top.
For a Mexican Fiesta Pizza, omit the rosemary. Add 1/2 teaspoon chili powder and 1/4 teaspoon cumin to the dough. Still use the chives! Substitute skim Mexican cheese for mozzarella on top, and top with sauteed onions and peppers.
You can’t go wrong with any variation of this delicious, HEALTHY, homemade pizza!
