Description

This meatloaf will make your mouth happy and your kids’ mouth’s happy.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 cup Zucchini, Grated
  • ½ cups Red Bell Pepper, Finely Diced
  • ½ cups Yellow Bell Pepper, Finely Diced
  • 2 cloves Garlic, Minced
  • 1-½ pound Ground Turkey
  • 1 whole Egg
  • 1 cup Panko Bread Crumbs
  • ½ cups Grated Parmesan Cheese
  • 1 cup Ketchup, Divided Use
  • ¼ cups Balsamic Vinegar
  • 2 Tablespoons Balsamic Vinegar
  • Salt And Pepper, to taste

Preparation

1) Preheat oven to 425 degrees F. Heat olive oil in a large pan over medium high heat. Add zucchini, bell peppers and garlic. Season with coarse salt and pepper and cook until vegetables are just tender, about 5 minutes. Set aside to cool.

2) In a large bowl combine turkey, egg, bread crumbs, cheese, 3/4 of the ketchup, 1/4 cup balsamic vinegar, salt and pepper. Mix in cooled veggies until just combined.

3) Press mixture into a loaf pan that has been sprayed with cooking spray. Whisk remaining 1/4 cup ketchup and 2 Tablespoons of balsamic vinegar in a small bowl. Brush glaze over entire loaf.

4) Bake for 1 to 1 1/4 hours. Let rest for 10 minutes before slicing.
