Herby and delicious, this is an easy weeknight meal that you can throw in the oven to illicit tastes of fall in every fork full.
Preheat the oven to 425 F.
In a large Ziploc bag, add all ingredients, seal the bag and shake until all ingredients are well coated. Add the mixture into a large jelly roll pan to spread out ingredients evenly. Roast for 20-25 minutes until potatoes and carrots are fork tender, turning 2-3 times.
