Description

A simple, quick and yummy pasta dish. Perfect for a summer evening. Ready in 20 minutes or less! Green and yellow zucchini squash highlight the dish.

Ingredients

  • 6 cups Penne Noodles, Cooked & Drained Per Package Directions
  • 2 Tablespoons Extra Virgin Olive Oil
  • ¼ teaspoons Red Chili Flakes
  • 3 cloves Garlic, Minced
  • 1 whole Large Green Zucchini, Sliced Very Thin (approx 1 1/2 Cups)
  • 1 whole Large Yellow Zucchini, Sliced Very Thin (approx 1 1/2 Cups)
  • ¾ cups Shredded Parmesan Cheese (fresh)
  • ¼ cups Fresh Parsley, Rough Chopped
  • 2 Tablespoons Fresh Basil, Rough Chopped

Preparation

1. Heat oil in a large frying pan or sauté pan over medium heat.

2. Add chili flakes, garlic and zucchini and cook for 5 minutes or until zucchini is tender, stirring often.

3. Add in the cooked pasta and toss together. Add Parmesan and fresh herbs and mix together. Turn off heat and stir until pasta is warmed through.

4. Season with salt and pepper. Top with more fresh herbs and Parmesan.
