Description

Healthy Turkey Meatball Sandwiches.

Ingredients

  • 1 Tablespoon Good Olive Oil
  • 1 pound Ground Turkey
  • 2 teaspoons Salt
  • 1 Tablespoon Pepper
  • 2 whole Egg Whites
  • 1 cup Bread Crumbs
  • 2 Tablespoons Balsamic Vinegar
  • 1 jar (24 Oz. Size) Newman's Own Sockarooni Sauce
  • Your Favorite Sandwich Rolls
  • 2 cups Shredded Mozzarella Cheese
  • 1 cup Julienned Basil

Preparation

1. Preheat a skillet and add the olive oil to medium heat.
2. In a bowl combine turkey, salt, pepper, egg whites, bread crumbs, and balsamic vinegar.
3. Roll the turkey mixture into golf ball size balls and place them in the skillet. Cover the skillet with a lid. This is very important to get moist, tender meatballs.
4. Preheat the broiler.
5. When the tops of the meatballs turn a “white” color, turn frequently until all sides are browned. After each turn, make sure to keep the lid on.
6. Once all the sides are browned, dump the sauce on top and heat until warmed through.
7. When the meatballs are done and the sauce is nice and hot, place 2-3 meatballs in a roll, sprinkle your desired amount of mozzarella cheese on top, and then place in an oven proof dish. Repeat for each roll.
8. Place the sandwiches under the broiler until the cheese is melted, about 3-5 minutes. Finish with 2 tablespoons of fresh julienned basil.

Was a little hesitant since turkey tends to be a bit dry but these were amazing! Such a quick and easy meal!
