Description

Crispy, crunchy, healthy BBQ Chicken Fingers. Serve with sweet potato fries!

Ingredients

  • 2 cups Lowfat Buttermilk
  • ¼ cups BBQ Sauce
  • 1 pound Boneless Chicken Tenders
  • 2 cups Panko Bread Crumbs
  • 2 Tablespoons McCormick's BBQ Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Sea Salt
  • ¼ cups Whole Wheat Flour

Preparation

Combine buttermilk and BBQ sauce in a baking dish. Add chicken to buttermilk. Marinate for 2 hours or overnight.

Preheat oven to 450F.

Combine panko, BBQ seasoning, garlic powder, salt, and flour in a large bowl. Coat chicken pieces in panko mix, then lay on a wire rack sitting on a baking sheet. Continue with remaining chicken pieces. Spray each pieces with cooking spray or olive oil.

Bake for 10-12 minutes, flip, coat with cooking spray, and bake for another 10-15 minutes.

When finished, brush with BBQ sauce.

My family loved these chicken fingers. I like them because I don’t have to deep fry them. I’m babysitting some little nieces and nephews next weekend (who tend to be very picky eaters at times) and my daughter and I are making these for them. I know they will just love them!

I ran out of panko, so I ended up using some crushed up cornflake crumbs to supplement the panko I had, and they ended up…soggy. I’ve never had a problem using cornflake crumbs and panko interchangeably before; although the taste is different the texture is not, so I’m not sure what happened.

That aside, they weren’t bad. We ate them with honey-bbq sauce. I’ll try your ginger chicken tender recipe with all panko and see if that makes a difference in crunch.
