Description

Hazelnut pasta adds great flavor to this pasta dish.

Ingredients

  • FOR THE PASTA:
  • ¾ pounds Penne Pasta
  • 1-¼ pound Salmon Fillet
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Cayenne
  • ⅓ cups Heavy Cream
  • Grated Parmesan Cheese, For Garnish
  • FOR THE PESTO:
  • ¾ cups Toasted Hazelnuts
  • 1 Tablespoon Lemon Juice
  • 2 cups Basil Leaves
  • 2 cloves Garlic, Peeled
  • 1 teaspoon Salt
  • 1 teaspoon Ground Black Pepper
  • ⅓ cups Plus 1 Tablespoon, Olive Oil

Preparation

Cook the pasta according to package directions. Then drain it and set aside.

To make the pesto: In a food processor, blend together all of the pesto ingredients from hazelnuts to ground black pepper. Then drizzle in the olive oil as you continue to blend and continue to blend until smooth. Set pesto aside.

Preheat broiler. Cover a rimmed baking sheet with foil, season salmon with salt, pepper and cayenne, and place salmon skin side down on baking sheet. Broil salmon for 7 to 8 minutes. Once cooked, remove pan from the oven and break salmon into pieces. Discard the skin.

Place pesto in a large stove top pan and heat over medium low to medium heat. Stir in the heavy cream. Then stir in the pasta and salmon pieces until they are well coated.

Serve and garnish with Parmesan cheese.
