A Hawaiian twist to a simple fish dish!
Preheat oven to 400F.
Using the reserved pineapple juice mix 1/3 of the juice with 1 egg white in a small bowl. Pour the bread crumbs in another small bowl. Then, begin to dip the fish in the egg mixture and cover with the bread mixture. Place these on a foil lined baking dish.
Once the fish is on the baking dish, pour another 1/3 of the juice over the fish. Then, top with 1/2 a can of the pineapple.
This will bake in the oven for 20 minutes or until it is easily flaked with a fork.
While this is baking, prepare the rice as instructed on the package.
In a separate skillet, I mixed the veggies, remaining pineapple juice and chunks then cooked on medium heat. I cooked these until the veggies were soft enough for our taste.
To serve this dish, I placed the fish on top of the rice and served with veggies.
